Gluten-Free Banana & Choc-Chip Cake

For those of you looking for a good gluten-free cake recipe today you are in for a treat!

 

Before we go into the recipe,  I have a bit of advice for you gluten-free recipe hunters out there.   You'll find Ingredients matter even more when you are baking gluten-free because it absorbs moisture a little differently.  Having tried a few different brands now, I have found that the  brand Orgran works well for me.  

 

Now with gluten-free baking I've noticed is that it can be a little unpredictable time wise, sometimes things can cook faster or slower than the stated time and while my cake took about 45-50 minutes to cook through yours may cook a bit faster depending on your oven so check it after 30-35 minutes and see how it is going - this is what I did.

 

Now I used half a cup organic apple sauce however you can just use another banana instead and skip out the apple sauce.  I just had some apple sauce on hand and wanted to try it out in the recipe and get some added vitamins and minerals into my cake.

 

As for the gluten-free choc-chips you can get these really good  semi-sweet chocolate chips  from my favorite online health and nutrition store www.vitacost.com.  They also deliver internationally and are very reasonably priced and are wheat, gluten and dairy free.  

 

If you want to try this cake and don't have gluten issues then you can use regular self-raising flour and chocolate chips of your choice.

  • Add some walnuts to this recipe for extra crunch - about 1/2 cup chopped

  • Substitute the apple sauce for an extra banana if you prefer

  • Serve with caramel sauce,  you can use the recipe from my Sticky Date Pudding

  • You can also regular self-raising flour and choc-chips in this recipe if you do not have dietary restrictions - bake as per recipe

  • You can also use a loaf pan to bake the cake if you don't have a ring pan

 

YOU WILL NEED

1/2 cup melted butter

2/3 cup caster sugar

1 teaspoon vanilla bean paste or 1 teaspoon vanilla extract

1 egg

2 large bananas mashed

1/2 cup unsweetened apple sauce

2/3 cup gluten-free chocolate chips 

1 + 3/4 cup gluten-free self raising flour

1 teaspoon cinnamon (optional)

2 tablespoons milk

 

METHOD

  1. Grease a 24cm/9 inch ring pan and set aside.

  2. Preheat your oven to 170°C/340°F.

  3. In a large mixing bowl add the melted butter and sugar and mix together until the butter becomes a little pale.

  4. Add the vanilla bean paste and egg and mix well until there is no visible egg yolk.

  5. Add the mashed bananas, apple sauce and choc-chips, mix well.

  6. Add the gluten-free self raising flour, cinnamon and milk and stir gently until everything is well combined.  

  7. Pour into your prepared ring pan and place in the oven for 40-50 mins (however check how your cake is going after 35 minutes as I find the timing can vary greatly with gluten-free recipes).  It's done when a skewer inserted into the cake comes out clean.

  8. Allow to cool and serve.
