Eat In Stylers, this is the MOTHER of all dips. Okay let me start at the beginning, I needed a blog post for this week and this weekend was also the day of a birthday party for a very close friend's birthday so I thought, I could make the dip for the blog and take it along to the party. So I asked the hostess if she minded me bringing it along, which she was happy for me to do, and I was honestly overwhelmed at the amazing response, some people even said it was the best dip they'd EVER eaten - wow, if that doesn't sell you, nothing will.
Sure cheese, bacon, jalapenos, spring onions all sound like the makings of a good dip but honestly guys this combination of flavors when BAKED turns into the most hearty, decadent and tasty dips you will ever eat! Really there is no need for a long descriptive blog post because it is super easy to make and turns out fabulous!
Perfect to serve with corn chips, crusty/toasted bread or whatever your dip loving heart desires! I could also see this being a topping or stuffing for chicken breasts or even mixed in hot pasta. Also I used some of the left over dip and mixed it with chopped barbecued chicken for some very scrumptious sandwiches the next day too!
Although this recipe calls for 2 x 250g | 9 ounce blocks of cream cheese you can easily substitute 1 block for 250g | 9 ounces of sour cream and I am sure it will still be just as heavenly.
This dip serves a large group so you can halve the recipe if you like - but trust me, this is one dip you won't mind extra of!
YOU WILL NEED
150g | 5 ounces + 50g | 2 ounces bacon chopped bacon pieces
1 tablespoon oil for frying
2 X 250g | 9 ounce blocks cream cheese softened to room temperature
1/4 rounded cup mayonnaise
2 cups grated sharp cheddar cheese + 1/4 cup cheese for topping
1/4 cup chopped spring onions
1/4 cup sliced pickled jalapenos + extra few jalapenos for topping (the jalapenos in the vinegar)
1/4 teaspoon chilli powder
Extra 2 tablespoons sliced spring onions (optional
Chilli flakes (optional)
Pre-heat oven to 180C/375\F.
In medium non-stick frying pan add the oil and heat over medium heat, add the bacon and gently fry until slightly browned and set aside.
In a large bowl add the chopped cream cheese and mayonnaise and mash with a fork until the cream cheese and mayonnaise are well combined and looks like a smooth paste.
Add the cheddar cheese, 150g/5 ounces of the fried bacon and chopping spring onions mixing until well combined.
Finely chop the sliced jalapenos and chilli powder add and mix until well combined.
Place into an oven safe 19cm / 7.5 inch dish and top with another 1/4 cup of grated cheese, remaining bacon, scatter a few sliced jalapenos on top and bake for 15-20 minutes or until golden, bubbly and the cheese has melted.
Remove from the oven and add some extra sliced spring onions and chilli flakes and serve along with with your favorite cracker, corn/tortilla chips, toasted breads or as part of an anti-pasto platter.
