Lemon & Coconut Snowballs

 Ho! Ho! Ho! Do you like my Santa and Rudolph Wooden serving board, a great little buy from Big W for under $10 - bargain!  I thought it was so cute and made the perfect backdrop for a little fun with these easy to make truffles.  I can just picture Santa, Rudolph and the rest of the team enjoying these little sweet morsels on their long night of deliveries.

 

With only seven ingredients these are a snap to make and you can get the kids in on the fun too!  I used two different butters in this but I am sure in a pinch you could just use one or the other, in fact you may even prefer a stronger sweet/salty combination.

 

If you'd like to give these as a thoughtful food gift, just pop each snowball into a mini-patty pan and place into a pretty box or container tied with a pretty ribbon and a note mentioning to keep these in the fridge - couldn't be easier!

  • Roll in coconut, nuts or crushed biscuits instead of icing sugar for different texture and flavor combinations

 

YOU WILL NEED

260g | 9 ounces white chocolate

2 tablespoons regular salted butter

3 tablespoons reduced salt butter

2 tablespoons whipping cream

1+1/2 teaspoons lemon extract

1/2 teaspoon coconut extract

1/4 cup Icing sugar for dusting

 

METHOD

  1. In a microwave or double boiler melt the white chocolate, butters and cream until smooth.  If you prefer using a  microwave, add the chocolate and butter to a medium sized glass bowl.   Set to  1 minute on high and then stir to check the melting process and if needed place back in the microwave until fully melted in 15-20 second bursts, checking and stiring between each additional heating in the  microwave.  Add the cream and stir in after the chocolate and butter is fully melted if using the microwave.

  2. Stir in lemon and coconut extract, cover with plastic wrap and place in the fridge to firm up for an hour or two).

  3. Add icing sugar to a small bowl.

  4. Use a teaspoon to scoop the white chocolate mix and drop it into the icing sugar, lightly toss and then use your hands to roll into a ball.

  5. Continue until all the "snowballs" are made.

  6. Store in an airtight container in the fridge and allow to come to room temperature before serving.

 

 

MAKES 20-25 SNOWBALLS
