Cranberry and Walnut Oat Cookies

These unassuming cookies aren't lavishly decorated but like the saying goes - the simple things in life are often the best, and I have to say, these Cranberry and Oat Cookies are a wonderful treat! One bite and you will be hooked on these delightful little cookies of perfection filled with delicious walnuts, cranberries, oats, spelt flour and cinnamon...yum so good.

These are great for after school treats, to enjoy with tea or coffee, sell at a bake sale in little bags and make a lovely food gift too!

MY TIPS

  • A pair of latex disposable gloves makes rolling these in your hands so much faster and easier. Alternatively if you are in a rush, you can just dollop tablespoons onto your tray.


YOU WILL NEED

1 cup room temperature butter

3/4 cup firmly packed brown sugar

1/2 cup caster sugar

2 eggs

1 teaspoon vanilla extract

1.5 cups spelt flour OR plain/all purpose flour/maida

1 teaspoon ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

1 cup dried cranberries

3/4 cup chopped walnuts

1/2 cup white or dark chocolate chips (optional)

2.5 cups plain quick or rolled oats

METHOD

  1. Preheat oven to 180C/350F and line your baking trays with baking paper, lightly greased and set aside.

  2. In a medium bowl, cream the butter, brown sugar and caster sugar using a hand or stand mixer.

  3. Add the eggs and vanilla into the butter mixture, mix well and set aside.

  4. In a large bowl mix the flour, cinnamon, baking soda and salt and mix well to combine.

  5. Add the cranberries, walnuts and choc chips (if you are adding them in) and mix well to combine.

  6. Mix the wet ingredients with the dry ingredients until well combined.

  7. Gradually add the oats (add about a cup at a time) stirring them into the mixture and combining well (this may be easier in a stand mixer but is not essential).

  8. Roll tablespoons of mixture in your hands and place onto your trays about 3cm/1.25 inches apart.

  9. Bake 10-12 minutes or until they are golden brown. Generally 10 mins will be lighter and chewier, 12 mins will be browner and crunchier.

  10. Place on a cooling rack to cool (if you can wait) and enjoy!

MAKES APPROXIMATELY 50 COOKIES
