Spelt Grapefruit Yogurt Cake


What do you do when the hubby brings home grapefruit? You make a Spelt Grapefruit Yogurt Cake! For years I never touched grapefruit convinced it was sour diet food but I didn't want to waste good food and went on the hunt to find a way to create something delicious from the humble grapefruit.

By now you should know I will always try to incorporate healthier flours into my baking and yes, this does have sugar in it but as far as cakes go it also has a lot of nutrition with the spelt flour, Greek yogurt, coconut oil, fresh eggs and the zesty grapefruit! Thank you at @ Sally's Baking Addiction for inspiring me to try this recipe with a few tweaks just for fun!

The result is a deliciously citrus cake bursting with goodness! Hope you'll give it a try and let me know how it goes for you!

YOU WILL NEED

1.5 cups | 190g | 6.7 ounces spelt flour

1.5 teaspoons baking powder

1/2 teaspoon salt

3 large eggs

3/4 cup | 180g | 6 ounces Greek vanilla yogurt

1 cup | 200g brown sugar | 7 ounces

1/2 cup | 120ml | 4.05 ounces coconut oil

1/4 cup | 60ml | freshly squeezed grapefruit juice

1.5 tablespoons grapefruit zest

2 teaspoons pure vanilla extract

1/2 teaspoon almond extract

Grapefruit Glaze

1 cup | 120g | 4 ounces sifted icing sugar/confectioners sugar

2 tablespoons freshly squeezed grapefruit juice, strained

1/4 teaspoon pure vanilla extract

METHOD

  1. Preheat the oven to 350°F |180°C. Grease and line a 23cm x 13cm | 9×5 inch loaf pan with baking paper, set aside.

  2. In a large mixing bowl whisk the eggs to break up and then add the yogurt, brown sugar, coconut oil, grapefruit juice, zest, vanilla and almond extract until well combined.

  3. Add the spelt flour, baking powder and salt and mix until combined but do not over mix.

  4. Pour the batter into the prepared loaf pan. Bake for 30 mins and check. It may take up to 45-50 minutes, so bake as needed.

  5. The cake is done when a sharp knife inserted into the centre of the cake comes out clean.

  6. Remove the cake from the oven and set on a wire rack and allow to cool.

  7. Make the glaze by mixing the icing sugar, grapefruit juice and pure vanilla extract and drizzle over the cake.

MAKES ONE DELICIOUS LOAF
