Greek Style Butter Cookies


Giving - that's what the holidays are all about. I love going shopping, even in the craziness of the mad shopping rush and finding the perfect something for that special someone. I love choosing the gift wrap, bags and boxes and making sure everything looks pretty arranged around the tree ''just so''.

This year I'm taking a slightly different approach and sharing my favorite cookies and treats as boxed food gifts and today I have a gorgeous perfect recipe for you. These are a traditional festive cookie however I love baking these all through the year because they are quick, easy and taste amazing!

These buttery cookies look beautiful when presented in a glass jar or gift box which anyone will love. They also work very well for a high tea, or kids party. They are also perfect with your afternoon cup of tea or coffee too.

To keep them fresh I like to store them in an airtight container in the fridge where they will keep for weeks but honestly they never last that long!

Greek Butter Cookies - a lovely good gift idea!

  • Add a little cinnamon, nutmeg, mixed spice or finely chopped mixed peel for subtly different flavored cookies

  • Dip in melted dark chocolate and allow to set for an even more decadent treat


YOU WILL NEED

1 cup butter, softened

3/4 cup caster sugar

1 egg

1 teaspoon vanilla extract

1/2-1 teaspoon almond extract (add the full teaspoon if you like a more "almondy" taste like I do)

2+1/4 cups plain flour

Icing sugar for dusting (optional)

METHOD

  1. Preheat oven to 200ºC/400ºF.

  2. Line baking tray with baking paper.

  3. In a medium mixing bowl cream the butter, sugar and egg until pale.

  4. Stir in the vanilla and almond extracts.

  5. Add the flour and mix to form a "dough". Knead gently by hand to combine if needed.

  6. Take about a teaspoon of the cookie dough and roll into balls.

  7. Place on baking tray about 3cm | 1.25 inches apart.

  8. Bake for 10 minutes or until the bottom edge is just lightly browned.

  9. Allow cookies to cool completely.

  10. Dust with icing sugar if desired.

MAKES APPROXIMATELY 45-50 COOKIES
