Chocolate Truffle Balls

It's beginning to look a lot like Christmas and that makes me a very happy girl! Right now I am deciding which dishes will dress my Christmas breakfast table this year. So many delicious ideas running through my head which is all very fun and exciting but then there is some comfort of having a few tried and true recipes that I enjoy making every year like these Chocolate Truffle Balls.

My philosophy at Christmas time is that dishes should be simple to prepare but taste and look delicious and these fit the bill perfectly The other great thing is that there is no limit to the combinations of flavors you can make so you can really have fun with these.

These truffles can also make a lovely food gift too. Just be sure to place them into a a little chocolate paper and pop into a box which is only one level so that you do not accidentally squash them.

  • Remove from the fridge 15-20 minutes before serving if the weather is cool, if it is hot, 5-10 minutes will be more than enough. If you live in a very hot climate just be careful not to leave them out too long as the chocolate may melt.

  • Experiment with different flavors and create your very own custom truffle!

  • These keep well in the fridge for several weeks in an airtight container


YOU WILL NEED

100g | 3.5oz chocolate of your choice (milk, dark, etc.)

1 tablespoon butter

2 tablespoons cream

1/2 cup glace cherries/ginger/pineapple/dried apricots (you can mix and match fillings to your taste)

1 cup crushed nuts – (almonds, hazelnuts, walnuts, unsalted peanuts)

OR

1 cup lightly toasted desiccated coconut

METHOD

  1. Melt butter in a small pan or microwave and set aside.

  2. In a double boiler or microwave melt the chocolate. If using a microwave use the medium setting in bursts of 40-50 seconds. Check, stir and repeat until completely melted.

  3. Add the melted butter, cream and the fruits/filling of your choice.

  4. Place mixture in the fridge for 10-15 minutes to firm up slightly.

  5. Take a small mixing bowl and pour in your nuts or coconut.

  6. Take heaped teaspoons of the chocolate mixture and drop it into the nuts/coconut and coat completely and gently roll between your palms into a ball.

  7. Place a mini patty pan/paper and then place on a plate. Continue until all the chocolate is used up.

  8. Cover and place in fridge for several hours to completely set.

  9. Remove from fridge shortly before serving.

MAKES APPROXIMATELY 30 TRUFFLES
