Watermelon Salad


Sometimes you just need something refreshing right? There is nothing like some fruit to make you feel like you are doing yourself some good and watermelon blends really well with salty flavors like onion and olives as well as sharp flavors like the dash of balsamic vinegar which brings this fast, beautiful and easy salad together in no time!


YOU WILL NEED

1 medium-large red onion very thinly sliced

1 rounded teaspoon salt

Enough water to cover your onions (regular tap water)

2 teaspoons of balsamic vinegar

1 teaspoon honey

1 tablespoon extra-virgin olive oil

6 cups watermelon chopped into bite-sized pieces (seeds removed)

1+1/2 cups of crumbled feta cheese

1/4 cup fresh mint

1/4 cup basil leaves

METHOD

  1. Place sliced onions & salt in bowl cover completely with water and allow to sit 5-10 minutes. Drain and rinse under running water.

  2. In a small bowl add balsamic, sugar and extra virgin olive oil, give a quick stir and set aside.

  3. Place the watermelon into a large salad/serving bowl.

  4. Add the sliced onions to the watermelon and mix together.

  5. Drizzle the balsamic/olive oil dressing over the watermelon, gently mix once more.

  6. Sprinkle with the feta cheese, mint and basil.

  7. Serve cold.

SERVES UP TO 4 AS AN APPETIZER
