Easy Baked Lamb Meatballs

As much as I love sweet treats gracing my Xmas feasts, some bite-sized savory goodness is always welcome and these juicy, flavorsome, one-bowl easy baked lamb meatballs ! This recipe allows you to spend more time with your family and friends and less time in the kitchen. Enjoy!
YOU WILL NEED
500g/1 pound lamb mince
1/2 cup onion finely chopped
1/4 cup dried bread crumbs
2 garlic cloves minced/finely chopped
1 egg
1/4 cup parmesan cheese finely grated
2 tablespoons ketchup
1 rounded tablespoon American mustard (or any mild mustard)
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon parsley minced
METHOD
Preheat oven to 200C/400ºF. Spray a large baking sheet with cooking spray.
Mix together onion, bread crumbs, garlic, egg, cheese, ketchup, mustard, salt, pepper and parsley in a large mixing bowl.
Add in ground lamb and mix gently until combined.
Form into 1-inch balls and place on prepared cookie sheet.
Bake in preheated oven for approximately 20 minutes, or until meatballs are browned and cooked through.
MAKES 29-30 MEATBALLS
