These juicy and moreish bite-sized Easy Baked Lamb Meatballs are perfect for any celebration feast! Add these to your holiday feasts, for some some bite-sized savory goodness.
This easy one-bowl recipe allows you to spend more time with your family and friends and less time in the kitchen.
YOU WILL NEED
500g/1 pound lamb mince
1/2 cup onion finely chopped
1/4 cup dried bread crumbs
2 garlic cloves minced/finely chopped
1 egg
1/4 cup parmesan cheese finely grated
2 tablespoons ketchup
1 rounded tablespoon American mustard (or any mild mustard)
1 teaspoon salt
1/4 teaspoon pepper
1 tablespoon parsley finely chopped
1 tablespoon mint finely chopped
1/2 teaspoon dried thyme (optional)
METHOD
Preheat oven to 200C/400ºF. Spray a large baking sheet with cooking spray.
Mix together onion, bread crumbs, garlic, egg, cheese, ketchup, mustard, salt, pepper, parsley, mint and dried thyme into a large mixing bowl.
Add in ground lamb and mix gently until combined.
Form into 1-inch sized balls (about a good rounded tablespoon of mixture per meatball) and place on prepared cookie sheet.
Bake in preheated oven for approximately 20 minutes, or until meatballs are browned and cooked through.
MAKES 29-30 MEATBALLS
