Sweet & Salty Popcorn

Who doesn't enjoy a big bowl of Sweet & Salty Popcorn as they binge watch their favorite holiday movies!

I love to cosy up on the couch and watch as many Christmas themed movies as I can over the festive season - A Christmas Carol is my absolute favorite and I watch it every year without fail - and it's that much more fun to watch with a big bowl of homemade, delicious popcorn.

Homemade popcorn is so simple, healthy, only takes a few minutes more and tastes SO MUCH BETTER! It's also much safer than than microwave popcorn as the commercial bags contain chemicals and toxins that are known to be carcinogenic - and nobody needs that in their body.

MY TIPS

  • If you are a salty popcorn person just nix the honey and cinnamon from the topping below and just add the butter!

  • Keep the lid JUST SLIGHTLY open to prevent the popcorn from steaming in the pot, otherwise you will not get yummy crispy popcorn - you want there to be a way for the steam to escape as the popcorn cooks

YOU WILL NEED

1/2 cup raw popcorn kernels

2 tablespoons coconut oil

1/2-3/4 teaspoon pink Himalayan salt

Flavor Topping

2 tablespoons melted butter

1 tablespoon honey

1/4 teaspoon cinnamon

METHOD

  1. In a medium-large non-stick pot add the coconut oil and 2 corn kernels and place over a medium heat.

  2. Once the two kernels pop, remove the cooked kernels and add the uncooked corn kernels and cover keeping the lid slightly open to prevent steaming within the pot. It will take a few minutes to start popping. Once the popping slows to 1 pop every couple of seconds it is done.

  3. Add the salt and with the lid on, shake until well combined.

  4. In a small bowl combine the melted butter, honey and cinnamon and then pour over the popcorn and again toss with the lid on to mix.

  5. Serve immediately and enjoy!
