Apple & Spice Streusel Muffins


There is nothing like the fragrance of apples and spice to make you feel like a domestic genius. Muffins are perfect for so many occasions due to their versatility and the fact they travel well - they also make a kind and fun food gift too. I recently served these for a family brunch and they went down a treat! The kids really loved them too.

My Spiced Apple Muffins were created by accident when I was supposed to use the apple filling to make another recipe for a family brunch but ended up adding them to my muffins instead and I can say I am glad I did. I find the cooking of the apple caramelizes them and brings out their lovely flavor while the warming cinnamon and nutmeg compliments the flavor of apple perfectly. Topped off with the sugary, buttery struesel mixture on top and they are positively scrumptious!

  • Use different fruits for example peaches or pears in place of the apple

  • Add some nuts or chocolate chips some fun variations

  • Clove powder is available at most Indian grocery stores


YOU WILL NEED

2 cups chopped apples ( I use any red apple)

1-2 tablespoons butter

1 teaspoon cinnamon

1/4 teaspoon nutmeg

A pinch of clove powder

1/2 cup butter (at room temperature)

1 cup caster sugar

2 eggs

1 teaspoon vanilla extract

2 cups plain flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Struesel Topping

1/3 cup packed brown sugar

1 tablespoon plain flour

1/4 teaspoon ground cinnamon

2 tablespoons butter (at room temperature)

METHOD

  1. Preheat oven to 180°C/375°F. Line a 12 cup muffin pan with 12 muffin pan liners.

  2. In a medium frying pan add the apples, butter, cinnamon, nutmeg and clove powder and cook over a medium heat until apples have softened. Set aside.

  3. In a large bowl, beat together butter, sugar and eggs well combined. Add the vanilla extract and stir in.

  4. Add the cooled apple mixture and mix well.

  5. In a medium bowl, add the flour, baking powder, baking soda and salt and mix until well combined.

  6. Add the flour mixture to the apple mixture and gently combine. Do not over mix.

  7. Pour the muffin batter evenly between the 12 lined muffin pans.

  8. In a small food processor add the brown sugar, flour and cinnamon and butter and blitz until mixture resembles coarse crumbs. If you don't have a small food processor you can do the same thing in a small bowl and just "fork" the butter through the mixture resembles coarse crumbs.

  9. Sprinkle the streusel mixture evenly over the 12 filled muffin pans.

  10. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.

  11. Allow to cool in muffin pan for 5-10 minutes before removing muffins from pan. (They will be soft until they cool a bit.
