This year I wanted to add some new flavors to my Christmas table and I thought some salty, herb infused, marinated feta would be just the thing between all those yummy sweet treats and I promise you this marinated feta is Y-U-M!!!
In the past I have usually just picked up a jar from the grocery store when I wanted a marinated feta but this year I wanted to try it out for myself and I can promise you this recipe doesn't disappoint and it is actually so easy (and much cheaper) to make your own marinated feta at home. Best of all you can add the herbs and flavors you like to create your own custom marinated feta. This recipe tastes lovely on it's own, with crackers, in salads, on sandwiches and pizza too - the options are endless ;-)
Ensure you have a clean and sterile glass jar ready to put your feta into. If you aren't sure, just put your jar in boiling water for 5-10 minutes and then remove and allow to air dry completely
The feta needs at least a week to marinate and if there is any bacteria/germs in your jar then the feta may just go off and become inedible
Ensure that your jar is airtight to allow the flavors to infuse and to keep everything else out and lastly ensure you place this in the fridge after you have added everything and sealed it shut
Use the left over oil on salads and meats - yum!
YOU WILL NEED
300g | 11 ounces feta cheese chopped into cubes
2 cloves garlic sliced
7-8 whole peppercorns
8 small sprigs of fresh thyme leaves
8 small sprigs of fresh oregano leaves
2 fresh bay leaves lightly broken
1+1/2 teaspoons chilli flakes (I add the full amount but you don't have to)
1+1/2 tablespoons lemon juice
Up to 4 cups light olive oil
METHOD
Place half the feta cheese into a CLEAN & STERILE glass jar with a firm air-tight lid for sealing.
Add the garlic cloves, peppercorns, half the thyme and oregano leaves.
Add the remaining feta cheese cubes and add the remaining thyme and oregano leaves and, bay leaves and lemon juice and finally pour the oil in until the feta is completely covered.
Seal tightly and allow to marinate for a week in the fridge before use.
When ready to serve gently remove from jar and sprinkle with some extra chilli flakes if desired.
SERVES 7-8 AS AN APPETIZER
