Old-Fashioned Apple Slice

OMG are the only words I can use to describe this Old-Fashioned Apple Slice. The aroma of freshly baked apples and spices in this gorgeous slice will take you back to your childhood with every heavenly bite. I promise you, this will become your new favourite recipe!

This recipe is actually adapted from a recipe of a lovely Italian friend of mine (thank you Mirella!) who was kind enough to share it with me. The original recipe is from The Life of Clare. Seriously I can't stop raving about it - the texture, the apples, the flavor - everything is AMAZEBALLS!!! And, everything just gets added to one bowl, so less clean-up which I always enjoy!

For this recipe I used a teaspoon of my Pumpkin Pie Spice which I simply adore - it is so incredibly versatile and works in so many baked treats. I swear once you make it, you will use it all the time! You can get the recipe here.

  • Don't be worried about it's seemingly thick consistency before baking because once the apple cooks and it's juices release into this wonderful slice everything bakes to perfection - when you eat it you feel like a joyous child all over again!

  • This slice can be eaten on it's own or with whipped cream, ice-cream, vanilla greek yogurt or custard or even with your afternoon tea or coffee!

  • This slice is great for lunch boxes, bake sales and picnics

  • If you serve it warm, shortly after removing from the oven, the top will have a nice, crispy crust however once it cools and is stored it will soften to a more cake-like consistency

  • Do ensure you spread the mixture evenly in your cake tin before baking as it will not really spread during baking


YOU WILL NEED

2 cups self-raising flour

1 cup caster sugar

3 apples, peeled, cored and diced (1cm)

1 teaspoon of Pumpkin Pie Spice otherwise you can use a mix of 1/2-3/4 tsp. cinnamon, 1/4 teaspoon nutmeg and a pinch of clove

150g | 5 ounces melted butter (you can do this on the stove or microwave)

2 eggs

1/4 cup almond milk or regular milk

1/2 teaspoon almond essence

Zest only of one small lemon

METHOD

  1. Preheat oven to 180C/350F. Grease and line with baking paper a 24cm / 9 inch square cake tin and set aside.

  2. In a large mxing bowl toss apples with the pumpkin pie spice until evenly coated.

  3. Add the self-raising flour and sugar and again toss until well combined.

  4. Add the melted butter, eggs, milk, almond essence and lemon zest and stir until well combined.

  5. Pour the mixture into your cake tin and using a spatula or back of a wooden spoon, spread the mixture so it is evenly distributed and sitting smoothingly in your cake tin.

  6. Bake for 35-45 minutes or until a skewer inserted in the middle comes out clean.

  7. Serve warm by itself or with whipped cream, ice-cream, greek yogurt or custard. Also goes great with an afternoon tea or coffee.
