Baked Cheesy Bacon & Jalapeno Dip

This is the MOTHER of all dips and easily my most popular party food recipe. This creamy dreamy Baked Cheesy Bacon and Jalapeno Dip is almost expected when I have people come over and I am lucky if I get a taste! If you make it, I promise you will be the hit of the party!

This rather decadent and hearty dip, filled with a magical combination of cheddar and cream cheese, bacon, jalapenos and spring onions is simply sublime when baked. This dip can be made ahead and reheated too so it's a great make ahead dish when you have a large crowd to feed.


MY TIPS

  • It is much easier to blend the mixture if your cream cheese is room temperature and softened

  • Perfect to serve with corn chips, tortilla chips, crackers or crusty/toasted bread

  • Use this mixture to stuff baked potatoes and chicken breasts, as the sauce component of a hearty potato bake or pasta or mixed into your scrambled eggs

  • In a pinch you can substitute 1 block of cream cheese for the equivalent (250g | 9 ounces) of sour cream

  • This dip serves a large group so you can easily halve the recipe if you wish however this is one dip you won't mind extra of!






YOU WILL NEED

Dip

150g | 5 ounces chopped bacon pieces

1 tablespoon oil for frying

500g | 18 ounces cream cheese softened to room temperature

1/4 cup mayonnaise

2 cups grated cheddar cheese

1/4 cup chopped spring onions

1/4 cup chopped pickled jalapenos (the sliced jalapenos in a jar with vinegar)

1/4 teaspoon chilli powder


Topping

50g | 2 ounces bacon chopped bacon pieces

1/4 cup grated cheese

Extra jalapenos

Extra spring onions (optional)

Chilli flakes (optional)


METHOD

  1. Pre-heat oven to 180C/375F.

  2. In medium non-stick frying pan add the oil and heat over medium heat, add the 200g/7 ounces of bacon and gently fry until fragrant and slightly browned, setting aside 50g/2 ounces for topping later.

  3. In a large bowl add the cream cheese and mayonnaise and mash with a fork until the cream cheese and mayonnaise are well combined into a smooth paste.

  4. Add the cheddar cheese, bacon, chopped spring onions, chopped jalapenos and chilli powder and mix until well combined.

  5. Place the mixture into an oven safe 19cm / 7.5 inch dish and top with another 1/4 cup of grated cheese, reserved bacon, scatter a few sliced jalapenos on top and bake for 15-20 minutes or until golden, bubbly and the cheese has melted.

  6. Remove from the oven and add some extra sliced spring onions and chilli flakes if desired and serve along with your favorite crackers, corn/tortilla chips and/or toasted breads.

SERVES 10 AS AN APPETIZER
