Guacamole

Are you ready to get your guac on? The thing I love most about today's recipe it is that it feels totally indulgent but is actually super healthy - this guacamole is packed with healthy omega-3 fats from the avocado and a host of vitamins, minerals and other gems of goodness from all the other goodies thrown in.

I have always wanted to make my own guacamole but never quite got around as I was happy just picking up a tub from my local grocery store. All that changed when I was working on my scrumptious Pork Belly Tacos recipe and I wanted the works - crispy pork belly, homemade guac, cooked and fresh salsa! (I will be uploading that recipe very shortly too.) Traditionally guacamole is made with lime but I didn't have any on hand so I experimented with lemon juice and vinegar and I was quite happy with the result.

  • If you don't have chilli vinegar just use more lemon juice or you can use a different vinegar as long as it isn't dark in color - otherwise your guac might end up looking a bit weird and grayish! You could also use 1/4 cup fresh lime juice in place of both lemon juice and vinegar as well. It's all good!


YOU WILL NEED

2 ripe avocados peeled and mashed

1/4 of a small red/Spanish onion finely chopped (red is preferred but you can use any)

1/2 tomato chopped

1-2 cloves of garlic crushed

4 tablespoons of lemon juice

1-2 tablespoons of chilli vinegar

1/2-1 green chilli finely chopped (depending on how much chilli you like)

1/4 teaspoon cumin powder (optional)

1 tablespoon finely chopped coriander/cilantro

Salt and pepper to taste

METHOD

  1. In a small mixing bowl combine the avocados, chopped onion, chopped tomato, crushed garlic, finely chopped chilli, lemon juice, chilli vinegar, chilli powder, cumin powder, coriander, salt and pepper.

  2. Transfer into a serving bowl and enjoy!

SERVES 4-6
